The Dinnertime Struggle

I struggle to cook dinner for my family every night of the week. Breakfast and lunch I have no problem with, but dinner? Dinner is my nemesis. I cook from scratch one or twice, but with swim practice, karate, homework, and volleyball practice I have little time to cook.

I can’t very well leave dinner cooking on the stove while I drive a child to the pool. On nights when we are home I am able to cook, but on nights when I an running hither, thither, and yon I need a good go-to meal that will satisfy my family. And, most importantly the meal must be easy to make and not time consuming.
