Way, way, way back in the day I had an experience with food. It was one of those “Best Food I Ever Ate” moments. I bit in to a Two Cousins cheesesteak and that was that I knew I had tasted the best food…ever. 20 plus years later and nothing has come close to the Two Cousins cheesesteak. Nothing.
Was it the crinkly, shiny paper that the cheesesteak was wrapped in? Or the coating of grease on the outside and inside of the shiny paper wrapped around the cheesesteak? Was it the way at first the sandwich was thick and robust until that first moment when I squeezed down on the sandwich and the grease slid from the sandwich to the wrapper before finally sliding down my arms? I’m not even making any apologies for using the word “grease” multiple times in this post. No, not me. “Grease” was an essential part of the Two Cousins cheesesteak. Grease, melty cheese, succulent steak, and a specially baked loaf that was oh so soft and yummy to bit in to.
A few months ago we ventured on a #seizingfamilytime roadtrip to Philadelphia. Two Cousins was located in my college town an hour or so outside of Philadelphia. Is Two Cousins still open? Back in 1983/4, I had never had a cheesesteak before. In fact even though I lived in Italy for four years as a teen I had never tasted Italian food cooked American style. Pizza cooked in the brick ovens of a pizzeria in Milan is a very, very distant cousin to the pizza from the pizzeria in America’s towns. The cheesesteak, while not a mainstay of Italian cooking, is definitely part of the family. Throw some spaghetti sauce on thre cheesesteak and you have beefy spaghetti on a roll.
